India is the only country rich in many varieties with different quality factors. Chilli is an essential ingredient of curry. Curry is characterized by tempting colour and titillating pungency. Both are contributed by chilly. In curry, chilly is used as a paste, powder, broken split or whole form. Red chilis are very rich in vitamin C and provitamin A. In addition, they are a good source of most B vitamins, and vitamin B6 in particular. They are very high in potassium and high in magnesium and iron. Their high vitamin C content can also substantially increase the uptake of iron from other ingredients in a meal, such as beans and grains.
Red chillies are grown across India on 792,000 hectares of land in Madhya Pradesh, Andhra Pradesh, Karnataka and Maharashtra. The crop is planted in August and September, and harvested in March and April. Of the 1,376,000 million tons of red chilli produced in India every year, 70% are consumed domestically, while 30% are exported.
